It all comes down to what you prefer, as perljam mentioned. Do you prefer a brake that doesn't have a lot of initial bite but can be progressively squeezed for good stopping power or do you like a lot of initial bite? With great front suspension and fat sticky tires, hard initial bite is fine because it loads the front end quickly for shorter stopping distances.
On bikes with skinny and less stocky front tires, that bite can cause the wheel to lock before the suspension has reacted and while there is insufficient loading on the front end. That's how my son crashed our TZ at about a buck 30 when the front end locked and slid out in an instant.
My bike will chirp the front Bridgestone if I grab it too hard before the front end is diving and loading the tire.
For an older bike ridden on the street, less initial bite is probably preferable.

For a rider in full on 100% attention semi race mode, more bite is always good.
